Irish Soda Bread
- 2 c. sifted all-purpose flour
- 2 c. unsifted whole wheat flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/4 c. golden raisins, chopped
- 2 tsp. caraway seed
- 1 1/4 to 1 1/2 c. buttermilk
- Heat oven to 375u0b0.
- Combine flours, baking powder, baking soda and salt.
- Stir in raisins and caraway seed.
- Add enough buttermilk to make a dough that is firm, but not dry.
- Turn the dough out onto a lightly floured surface and knead until it is smooth, 2 or 3 minutes.
- Shape the dough into a round loaf and, using a sharp knife, slash a large X 1/4-inch deep across the top. Place loaf on a lightly greased baking sheet and bake for 35 to 40 minutes, or until the bottom of the loaf sounds hollow when tapped.
