Cape May Clam Chowder Recipe
- 12 lrg bay clams steamed, minced
- 3 c. clam broth with Water to make 3 c.
- 1/4 lb fresh scallops minced
- 3 slc bacon
- 1 lrg onion minced
- 2 x green peppers minced
- 2 x carrots minced
- 3 x celery stalks minced
- 2 x potatoes peeled, diced
- 2 Tbsp. minced fresh parsley
- 1/4 tsp thyme
- 1/4 tsp basil
- 1/4 tsp marjoram
- 1 Tbsp. sugar
- 4 med tomatoes peeled, minced (or possibly 1 can tomatoes) Salt to taste Freshly-grnd black pepper to taste
- Heat bacon in saucepan.
- Add in onion, green pepper, carrots and celery.
- Cook till tender.
- Add in clam broth with water, potatoes, thyme, parsley, salt and pepper, sugar and scallops.
- Cook 15 min.
- Let cold.
- Add in minced clams and tomatoes and juice from tomatoes.
- Reheat for 7 min.
- This recipe yields 3 servings.
