Grilled Tuna Burgers With Wasabi Mayonnaise
- 1 12 lbs skinless tuna fillets, cut in 1-inch pieces
- 14 cup fresh cilantro leaves
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard or 1 tablespoon honey dijon mustard
- 12 cup fresh breadcrumb (Soft)
- 2 shallots or 2 green onions, minced
- 2 teaspoons grated fresh ginger
- 2 teaspoons low sodium soy sauce or 2 teaspoons low-sodium tamari
- 12 teaspoon fresh ground pepper
- 8 slices challah or 8 slices challah buns or 8 slices other soft egg bread, toasted
- avocado, slices (optional)
- cucumber, slices (optional)
- tomatoes, slices (optional)
- watercress (optional)
- mixed sprouts (optional)
- 1 cup mayonnaise (Hellmans)
- 2 green onions, minced
- 2 teaspoons wasabi powder or 2 teaspoons prepared wasabi
- 1 lime, juice of (About 1-2 tablespoons)
- 1 tablespoon Dijon mustard or 1 tablespoon honey dijon mustard
- 1 -2 teaspoon low sodium soy sauce (optional) or 1 -2 teaspoon low-sodium tamari (optional)
- 1 tablespoon chopped fresh chives
- sea salt, to taste (Only if needed!)
- fresh ground black pepper, to taste
- MAKE THE BURGERS:.
- Place tuna, cilantro leaves, mayonnaise, and mustard in a food processor.
- Pulse 5 or 6 times or until coarsely ground.
- Add breadcrumbs, shallots or green onions, fresh ginger, soy sauce or tamari, and pepper, and 1 or 2 times, to combine.
- Form 4(1" thick)patties, chill 1 hour.
- Grill burgers over medium-high heat, about 3 minutes on each side to desired degree of doneness.
- Remove from grill; cover loosely, and let rest 3-4 minutes.
- WASABI MAYONNAISE:.
- Combine all ingredients in a small bowl and stir to blend.
- Refrigerate in airtight container until ready to serve.
- ASSEMBLY:.
- Serve on toasted challah bread with Wasabi Mayonnaise, avocado, cucumber or tomato slices, and watercress.
