Portuguese rice
- 1/4 cup olive oil (for sauteing)
- 1 1/2 cup onion, chopped
- 2 tsp minced garlic
- 1 1/2 tsp salt
- 1/4 tsp crushed red pepper, or flakes
- 1 bay leaf
- 1 1/2 cup petite diced tomatoes (14.5 oz can)
- 2 1/4 cup water
- 2 tbsp fresh or dried parsley
- 2 tbsp fresh or dried cilantro
- 1 1/2 cup white long grain rice
- In a 4-quart medium pan heat olive oil over medium-high heat.
- Add onion, cook about 4 minutes or until soft.
- Add garlic, salt, red pepper, & bay leaf; cook 1 min
- Add tomatoes, cook 2 minutes then add water, parsley, and cilantro.
- Bring back to a boil then add rice.
- Boil, stir, cover pot and reduce heat.
- Cook 20 min then let set for 5 minutes and fluff with fork and serve.
