Portuguese rice

  1. In a 4-quart medium pan heat olive oil over medium-high heat.
  2. Add onion, cook about 4 minutes or until soft.
  3. Add garlic, salt, red pepper, & bay leaf; cook 1 min
  4. Add tomatoes, cook 2 minutes then add water, parsley, and cilantro.
  5. Bring back to a boil then add rice.
  6. Boil, stir, cover pot and reduce heat.
  7. Cook 20 min then let set for 5 minutes and fluff with fork and serve.
