Stuffed Potatoes-La-Zeoli
- 6 lg. baking potatoes
- 1 lb. lean beef
- 1/2 clove garlic
- 1/2 onion, chopped
- 1 tsp. parsley
- 1 tsp. orgreno
- 1 tsp. basil
- 1 can (1-3/4 lb.) crushed tomatoes
- 1-1/2 lb. sharp cheese
- Peel potatoes.
- Mixed the ground beef along with the other 5 ingredients.
- Cut a very thin slice from each of the potatoes on each top, take a small sharp spoon and hollow out the middle of the potato.
- Be care not to scrape too hard, just enough to fill the potatoes.
- Go as deep as you can without breaking the potatoes.
- Stuff the potatoes with the fillings.
- After stuffing the potatoes, place in a large cooking dish.
- Cover potatoes with crushed tomatoes and cheese.
- Bake for 1 hours and serve.
