Ghanaian Fruit Gimlet
- 14 melon
- 14 watermelon
- 2 papayas
- 12 pineapple
- 1 banana
- 1 mango
- 3 teaspoons crystallized ginger, finely chopped
- 6 tablespoons gin
- 6 tablespoons lime juice
- 6 tablespoons brown sugar
- 6 mint sprigs
- Fill 6 red wine glasses half full with equal portions of balls or squares of the fruit.
- Sprinkle each with 1/2 tsp crystallized ginger.
- Pour 1 Tbs gin and 1 Tbs lime juice over the fruit and ginger.
- Sprinkle each with 1 Tbs brown sugar.
- Refrigerate before serving.
- Right before serving, add slices of banana.
- Garnish each with a sprig of mint.
- Serve well-chilled.
- If no crystallized ginger is available.
- Substitute with 3 tsp powdered ginger.
- Simply sprinkle each serving with 1/2 tsp powdered ginger.
