New Crush Potatoes

  1. Place potatoes in saucepan.
  2. Add boiling water and bring to a boil over high heat.
  3. Reduce heat to medium, cover and cook until potatoes are tender all the way through, 15-20 minutes.
  4. Drain potatoes.
  5. Wipe pot clean and return potatoes to saucepan over low heat.
  6. Crush potatoes with a fork against the sides of the pan.
  7. Mash in mint, chives and butter until potatoes are crushed into uniform pieces.
  8. Season to taste with salt and pepper.
