Butternut Squash, Coconut and Lime Soup

  1. Heat dressing in large saucepan on medium heat.
  2. Add onions; cook and stir 4 min.
  3. or until tender.
  4. Add garlic and ginger; cook and stir 1 min.
  5. Add squash, broth and pepper; stir.
  6. Bring to boil; simmer on medium-low heat 25 min.
  7. or until squash is very tender, stirring occasionally.
  8. Blend, in batches, in blender until smooth, returning each pureed batch to saucepan.
  9. Stir in coconut milk; cook on medium heat 3 to 5 min.
  10. or until heated through, stirring frequently.
