Italian Pancakes
- pizza sauce (optional) or spaghetti sauce (optional)
- 2 cups Bisquick baking mix
- 1 cup milk
- 2 eggs
- 12 cup shredded mozzarella cheese
- 12 cup pepperoni (finely chopped)
- 12 cup tomatoes (finely chopped)
- 14 cup green bell pepper (finely chopped)
- 1 teaspoon oregano
- 1 teaspoon basil
- Heat pizza sauce and keep warm.
- Wisk together baking mix, milk and eggs until blended.
- Stir in remaining ingredients.
- Use a tablespoon to spoon the batter onto hot griddle.
- Cook until edges are dry and pancake is a golden color.
- Serve and dip into pizza sauce.
