Seared Green Beans, Water Chestnuts, Shallots and Soy Glaze
- 1 lb green beans, ends trimmed and cut in half on an angle
- 1 (1/2 cup) can water chestnut
- 12 cup shallot (approximately 2 diced fine)
- 12 cup roasted red pepper
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 12 cup chicken broth
- 1 teaspoon kosher salt
- 12 teaspoon ground black pepper
- 1 teaspoon sesame seeds, toasted
- 1 teaspoon olive oil
- Step 1.
- Dry pan toast the sesame seeds to lightly brown.
- Just 1-2 minutes in a dry pan and lightly toast.
- Remove and then set to the side to cool.
- Step 2.
- Now in a medium saute pan, add the olive oil and heat to medium.
- Add the shallots and cook 2-3 minutes until slightly soft.
- Add the water chestnuts, red peppers, soy, honey, broth and seasoning.
- Add the beans and cover.
- Cook on medium low for 5-8 minutes until the beans are soft but still have a little texture to them.
- Remove the cover and let the sauce reduce 2 minutes.
- Remove to a serving bowl and top with the sesame seeds and serve.
- A perfect side dish.
