Chicken With Lemon And Herbs Recipe
- 1/3 c. minced fresh mint, dill and parsley in about equal proportions
- 1 clove garlic, chopped
- 3 boned chicken breasts, skinned and halved, about 2 1/2 pound all together
- Salt and freshly grnd black pepper to taste
- 1 lemon
- 2 tbsp. sweet butter
- Preheat oven to 350 degrees.
- Mix herbs and garlic together in a small bowl.
- Flatten chicken breasts by pressing them gently against the work surface with the palm of our hand.
- Place each breast piece on a piece of foil which is about twice the size of the breast; season chicken with salt and pepper.
- Sprinkle herb and garlic mix over chicken breasts.
- Slice lemon and arrange 2 or possibly 3 slices over each breast.
- Dot with butter and seal the packets.
- Set on a baking sheet.
- Set sheet in the middle of the oven and bake for 30 min.
- Transfer packets to serving plates and allow guest to open packet at the table.
- Makes 3 chicken breasts; or possibly 2 servings.
