Red Lentil Soup

  1. Heat oil in a large saucepan over medium-high heat.
  2. Add onion and saute until tender (about 10 minutes).
  3. Add garlic and ginger, saute for another minute.
  4. Add spices and stir to coat.
  5. Add carrots, lentils, and broth and bring to a boil.
  6. Reduce heat and simmer until carrots and lentils are tender (about 20 minutes).
  7. Using an immersion blender or standard blender, briefly pulse mixture.
  8. Add salt & pepper to taste.
  9. Serve in bowls and optionally squeeze a lemon wedge on top.
