Sun-Dried Tomato Meatloaf
- 1 Tablespoon Oil
- 1 whole Small Onion, Diced
- 3 whole Carrots, Slivered
- 1 Tablespoon Minced Garlic
- 1 pound Very Lean Ground Beef
- 2 whole Eggs
- 1 Tablespoon Sriracha
- 8 ounces, weight Sun-Dried Tomatoes (in A Jar), Drained And Pureed
- 4 whole Hamburger Buns, Ground To Crumbs

- Preheat oven to 350 F. 2.
- Heat oil in a saute pan over medium-high heat then add onions and carrots.
- Cook onions and carrots until tender.
- 3.
- In a large bowl, combine all the ingredients (including onion mixture) by hand.
- Transfer mixture into a greased standard size loaf pan.
- 4.
- Bake for 30 minutes or until center is no longer pink.
