Okara Muffin with Banana and Yogurt
- 80 grams Yogurt
- 80 grams Sugar
- 1 Egg
- 80 grams Fresh okara
- 80 grams Cake flour
- 1 medium Banana
- 1 tbsp Lemon juice
- 1 Cinnamon
- 1/4 tsp Baking soda
- 1 tsp Baking powder
- Add the yogurt to the sugar, and mix until smooth.
- Add the beaten egg, and mix some more.
- Make banana paste or mash it with a fork in a separate bowl.
- Add the lemon juice, and mix.
- Add the okara, and mix well.
- Add this mixture to Step 2, and mix well.
- Sift the cake flour, baking soda, and baking powder.
- Add cinnamon, and mix with Step 3.
- Pour the batter into muffin cups, and tap on the counter to remove air.
- Bake for 20 minutes in the preheated oven at 180C/350F.
- When cooled, if you don't plan to eat right away, put them in a plastic bag.
- They are moist and chewy muffins.
