Chicken Fruit Salad
- 2-1/2 to 3 cup diced, cooked chicken
- 1 cup diced celery
- 2 tbsp. chopped green onion
- 1 tsp. salt
- 2 tbsp. lemon juice
- 1 can (11 oz.) Mandarin oranges, well drained.
- 1 cup sliced seedless grapes (red
- white)
- 1/2 cup slivered almonds, toasted
- 1/2 cup mayonnaise
- Combine the chicken, celery and green onions.
- Mix in salt and lemon juice; chill covered several hours.
- Add oranges, grapes and almonds.
- Toss with mayonnaise, being careful not to break up orange slices.
- Serve on lettuce leaves with crackers of your choice.
