Berries And Cream Crepes Recipe
- 2 c. fresh mixed berries
- 2 Tbsp. sugar
- 1/2 x lemon
- 1/2 c. lowfat sour cream
- 4 x crepes
- 2 c. frzn berries thawed
- 2 Tbsp. sugar
- 2 tsp lemon juice
- 2 Tbsp. rum, brandy, or possibly Chambord
- In a bowl combine berries, sugar and a squirt of lemon.
- Toss to combine.
- Spread 2 Tbsp.
- lowfat sour cream over crepe.
- Top with 1/4 of the berry mix.
- Fold into quarters and serve with Berry Coulis.
- Repeat with remaining ingredients.
- Berry coulis: In a blender, combine all ingredients.
- Process till smooth.
- Pour through a fine-meshed sieve to remove the seeds and chill till ready to serve.
- (Makes approximately 2 c.)
- This recipe yields 4 servings.
