Meg's Green Sauce
- 1 serrano pepper, seeded & roughly chopped
- 3 tomatoes, cut into 1/4 's
- 12 bunch cilantro
- 12 red onion, cut into 1/4 's
- 1 garlic clove
- 2 avocados, peeled
- 12 cup light sour cream
- 2 teaspoons salt
- Place pepper, tomatoes, cilantro, red onion, and garlic clove in food processor.
- Process until it looks like salsa.
- Add 1 avocado, pulse until mixture turns light green.
- Add the next avocado, pulse until mixture looks lighter.
- Add sour cream and pulse until mixture is smooth to your liking.
- Add salt and pulse one last time.
- Serve with tortilla chips, quesadillas, whatever you like.
- Note the color might not be the prettiest, but it sure is tasty!
