Mexican Spice Salad
- 1 cup diced red bell pepper (or any sweet pepper)
- 1 cup diced green pepper
- 1/4 cup diced red onion.
- 1 cup cherry tomatoes, halved
- 1/4 cup finley chopped fresh cilantro
- 1/4 cup sour cream
- 1 tbsp chili powder (or to taste)
- 1/2 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp lime juice
- pinch sugar
- In a moderately sized mixing bowl combine the tomatoes, onion, peppers, cilantro & a small pinch of sugar.
- Allow to rest for 15 minutes.
- Add the sour cream, garlic powder, chili powder, cumin, lime juice, salt & pepper.
- Stir to mix together.
- Chill for another 15 minutes.
- Stir again just before serving.
- Can be made up to a day ahead.
- If the stored salad's dressing separates, add another tablespoon or two of sour cream & stir together.
