Cheesy Surprise Tikkis
- 2 cups mashed potatoes
- 12 Ritz Crackers, crushed (about 1/3 cup)
- 1/2 cup Cracker Barrel Shredded Double Cheddar Cheese
- 1 Tbsp. fresh lemon juice
- 1/2 tsp. garam masala
- 1/2 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1/2 tsp. red chili powder or cayenne pepper
- Mix potatoes and cracker crumbs; divide into 8 balls, using about 1/4 cup of the potato mixture for each.
- Flatten each ball to 3-inch patty.
- Combine remaining ingredients.
- Make small indentation in centre of each patty; fill each with 1 Tbsp.
- cheese mixture.
- Reshape patties to completely enclose filling; flatten slightly.
- Heat large nonstick skillet sprayed with cooking spray on medium-high heat.
- Add 4 patties; cook 10 min.
- or until each is crisp and golden on both sides, turning gently after 5 min.
- Repeat with remaining patties.
