Beef With Yorkshire Pudding Recipe

  1. Place roast in a shallow pan, fat side up.
  2. Season with salt and pepper.
  3. Insert meat thermometer avoiding bone.
  4. Roast, uncovered, at 325 degrees till meat thermometer registers 140 degrees for rare, 160 degrees for medium and 170 degrees for well done.
  5. (Allow about 3 1/4 hrs for rare, 4 hrs for medium and 4 3/4 hrs for well done.)
  6. Remove meat from pan.
  7. Cover; keep hot.
  8. Reserve 1/4 c. meat drippings.
  9. Increase oven temperature to 400 degrees.
  10. Combine Large eggs, flour, lowfat milk and salt.
  11. Beat 1 1/2 min with electric mixer.
  12. Pour half the reserved drippings into each of two 9 x 9 x 2 inch baking pans.
  13. Pour half the batter into each pan.
  14. Bake at 400 degrees for 30 min.
  15. Serve with roast.
  16. Serves 12.
