Beef Chow Mein Recipe
- 3/4 pound grnd beef
- 4 teaspoon fat
- 4 tbsp. onions, minced fine
- 1 1/3 c. celery, thinly sliced
- 1 1/3 c. Chinese vegetables
- 2 c. warm water
- 1 teaspoon salt
- 4 teaspoon cornstarch
- 1 c. cool water
- 4 tbsp. soy sauce
- 2 c. cooked rice
- Brown meat; drain off fat.
- Measure fat into pan; brown onion.
- Add in celery, Chinese vegetables, warm water, salt, and soy sauce; simmer 15- 20 min.
- Combine cornstarch with cool water; add in to mix.
- Cook till thickened, stirring continuously.
- Serve 3/4 c. over 1/2 c. rice per serving.
- Yield: 4 servings.
- 1 serving: 2 meat, medium fat exchanges; 2 bread-starch exchanges; 1 fruit exchange.
