Dipped Somen Noodles In Sesame Dipping Sauce
- 1 as much as you prefer Somen noodles
- 100 ml Kombu based mentsuyu (3x concentrate)
- 200 ml Filtered water
- 1 to 2 tablespoons Sesame paste
- 5 drops or so Ra-yu (best if with chili flakes)
- 1 tsp Grated ginger
- 1 tbsp Ground sesame seeds
- 1 ton, as garnish Green onions or scallions
- Put the ground sesame in a bowl.
- Mix the mentsuyu and water in little by little using a whisk.
- Add all the ingredients and mix.
- Put the sauce in bowls that are a bit bigger than soba-choko (small soba dipping bowls).
- Add lots of green onion just before eating, dip the noodles into the sauce, and enjoy.
- "Rich and Delicious: All-Purpose Sesame Sauce" is the basic form of this sauce.
- It's an easy to use up amount.

- Variation 1: Natto and summer vegetables with sesame sauce on top of tofu = an isoflavone packed dish!
- Variation 2: Cold rice with sauce and summer vegetables.
- Rinse hot rice with ice water to make a non-sticky and light zosui (rice soup).
- Variation 3: A noodle salad-type dish made with thin udon noodles, cucumber, shiso leaves, kimchi and mayonnaise.
- Try adding boiled pork, boiled chicken, lettuce etc.
