Scampi Salmon (shrimp syle)
- 250 grams salmon (boneless)
- 1 clove garlic minced
- 1 clove onion, chopped
- 1 bunch broccoli (small size)
- 1/4 cup dry white wine
- 2 tbsp olive oil, extra virgin
- 1 piece bell pepper (any color you want)
- 1 cup grated parmesan cheese
- pinch salt & pepper
- In a pan, saute' garlic, onion and bell pepper in olive oil.
- Add salmon then pour dry white wine.
- Simmer until liquid evaporate.
- Put the grated cheese and broccoli.
- Stir a bit just to coat the salmon and broccoli with cheese.
- Add salt and pepper to taste.
- Can be served with wheat bread (for the weight conscious) or steam rice with soup.
