Diabetic Apple Cake
- 2 1/2 cups flour, all-purpose
- 3 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
- 1 cup butter
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 teaspoon liquid sugar substitute
- 4 cups apples
- 1 cup walnuts
- Mix dry ingredients, add butter, eggs, sugar substitute, and blend well.
- Stir in grated apples and nuts.
- Bake in well-greased 9x13 pan at 375F (190C).
- for 40 to 50 minutes.
