Spaghettini With Smothered Onions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onions and garlic and toss to coat with oil.
  3. Reduce heat to low, cover and cook, stirring, until onions are very tender and a deep golden color, about 15 minutes.
  4. Stir in chicken broth, thyme and pepper.
  5. Meanwhile cook the pasta.
  6. Drain.
  7. Place pasta in a large bowl.
  8. Add peas and browned onions.
  9. Toss to combine.
  10. Add cheese and parsley and toss again.
  11. Season to taste with salt and pepper.
