New Mexico Beef Stew
- 2 cups corn
- 1 (15 ounce) can garbanzo beans
- 1 cup sliced celery
- 1 cup chopped onion
- 3 garlic cloves, minced
- 2 -3 chipotle peppers in adobo seasoning, chopped
- 1 12 lbs beef stew meat
- 1 teaspoon salt
- 12 teaspoon pepper
- 1 teaspoon dried thyme, crushed
- 1 (28 ounce) can whole tomatoes, cut up
- Combine all ingredients in slow cooker.
- Cover and cook on low for 12-14 hours or high 6-7 hours.
