Weight Watchers Lemon Cheese Bars Microwave Recipe
- 1/2 c. reduced-calorie tub butter
- 1/4 c. + 2 tbsp. brown sugar, firmly packed
- 1 1/2 c. all-purpose flour
- 3 ounce. quick oats
- 10 ounce. reduced calorie cream cheese
- 1/4 c. skim buttermilk
- 1 lg. egg
- 2 tbsp. lemon juice
- 2 tbsp. shredded coconut, toasted

- To prepare crust, in medium bowl, combine butter and 1/4 c. of the sugar.
- With mixer on low speed, beat till creamy.
- Add in flour and oats; beat till blended.

- Press mix into bottom of an 8 inch square pan.
- Microwave on medium for 4-6 min, turning pan once, till dry around edges; set aside.

- Place cream cheese in small bowl.
- Microwave on medium for 40 seconds, till softened.
- Stir in lowfat milk, egg, and lemon juice; mix well.
- Spread over crust.
- Place remaining sugar in small sieve; tapping sieve gently, sprinkle sugar proportionately over filling.
- Sprinkle with coconut.
- Microwave on high 6-10 min, turning dish once, till hard in center.

- Cold completely on rack.
- Chill at least 2 hrs before cutting into 12 equal bars.
- Each serving is 205 calories.
