Parma Wrapped Chicken

  1. Preheat the oven to 200C Spoon the olive oil into a roasting pan and add all the vegetables, tossing to coat.
  2. Sprinkle the vegetables with cumin seeds (if using).
  3. Place two sage or basil leaves on top of each chicken breast, then season with salt and pepper.
  4. Wrap a slice of Parma ham around each chicken breast.
  5. Arrange the chicken breasts on top of the vegetables.
  6. Roast for 30-35 minutes, or until the chicken is cooked and the vegetables are tender.
  7. Serve.
