Parma Wrapped Chicken
- 1 tablespoon olive oil
- 2 red onions, sliced into wedges
- 2 medium sweet potatoes, peeled and cut into chunks
- 6 small carrots, halved
- 1 red pepper, deseeded and cut into chunks
- 1 yellow pepper, deseeded and cut into chunks
- 1 teaspoon cumin seed (optional)
- 8 sage or 8 basil leaves
- 4 boneless skinless chicken breasts
- 4 slices parma ham
- salt & freshly ground black pepper
- Preheat the oven to 200C Spoon the olive oil into a roasting pan and add all the vegetables, tossing to coat.
- Sprinkle the vegetables with cumin seeds (if using).
- Place two sage or basil leaves on top of each chicken breast, then season with salt and pepper.
- Wrap a slice of Parma ham around each chicken breast.
- Arrange the chicken breasts on top of the vegetables.
- Roast for 30-35 minutes, or until the chicken is cooked and the vegetables are tender.
- Serve.
