Chicken and Bacon Burger
- Avocado Topping
- 1/2 cup (125g) tub PHILADELPHIA Spreadable Cream Cheese
- 1 cup ripe avocado, peeled, stone removed and mashed Target 10 ea For $10.00 thru 02/06
- 1 cup finely chopped tomato
- 1 cup finely chopped red onion
- Burgers
- 750g chicken mince or chicken fillets minced Whole Foods 1 lb For $3.99 thru 02/09
- 1/2 onion, very finely chopped
- 1 1/2 tablespoons VEGEMITE
- 1 cup breadcrumbs
- 1 x 55g egg
- 1 tablespoon finely chopped fresh parsley
- 3 rindless bacon rashers, cut in half lengthwise Rite Aid 2 For $7.00 thru 02/06
- Mix cream cheese, avocado, tomato, and onion in a mixing bowl, cover and refrigerate until burgers are ready.
- Combine mince, onion, Vegemite*, breadcrumbs, egg and parsley in a bowl and mix well.
- Shape into 6 burgers.
- Wrap bacon around burgers and secure with toothpicks.
- Preheat and lightly grease a BBQ or grill and cook burgers for 10 - 12 minutes each side or until browned and burgers feel firm when pressed with tongs.
- Serve with avocado topping.
