Apple-Clove Butter

  1. Combine apples, cider, orange juice and cinnamon stick in heavy large saucepan.
  2. Bring to boil.
  3. Reduce heat to medium-low.
  4. Cover and simmer until apples are very tender, stirring occasionally, about 10 minutes.
  5. Discard cinnamon stick.
  6. Puree apple mixture in processor.
  7. Return to same saucepan.
  8. Stir in brown sugar, orange peel and cloves.
  9. Simmer over medium-low heat until mixture is dark in color and thick, and mounds on spoon, stirring frequently, about 45 minutes.
  10. Transfer to large bowl.
  11. Cool completely.
  12. (Can be prepared 1 week ahead.
  13. Cover and refrigerate.)
