Seafood Stuffed Green Peppers Recipe
- 6 med. size green peppers
- 1/2 pound shrimp, peeled & deveined
- 1 (6 ounce.) pkg. frzn crabmeat, thawed & liquid removed
- 1 1/2 c. cooked rice
- 1/2 c. celery
- 1/2 c. onion
- 2 tbsp. minced pimento
- 3/4 c. mayonnaise
- 1 teaspoon curry pwdr
- 1/2 teaspoon salt
- Pepper, bread crumbs, butter
- Cut top off each pepper; remove seeds and membrane.
- Cook in boiling water 5 min.
- Drain well and set aside.
- Combine shrimp, crab meat, rice, celery, onion and pimento.
- Combine mayonnaise, curry pwdr, salt and pepper.
- Stir into crab meat mix.
- Stuff peppers with seafood mix; sprinkle each with bread crumbs and dot with butter.
- Place in 1 1/2 qt baking dish.
- Add in warm water to depth of 1/2 inch.
- Bake at 350 degrees for 30 min.
