Pumpkin Raisin Muffins
- 2 cups brown rice flour
- 1 cup tapioca flour
- 12 cup sorghum flour
- 12 cup coconut flour
- 1 teaspoon xanthan gum
- 1 teaspoon allspice
- 2 teaspoons cinnamon
- 1 12 tablespoons baking powder
- 1 teaspoon salt
- 1 12 raisins
- 1 egg
- 14 cup egg white
- 1 cup brown sugar
- 1 cup orange juice
- 1 cup soymilk
- 14 cup vegetable oil
- 14 cup coconut oil
- 1 12 cups pumpkin puree
- Mix dry ingredients together in a large bowl.
- Mix wet ingredients in a separate smaller bowl.
- Stir wet into dry and mix until they just combined.
- Bake at 350C for 20 minutes or until done.
