Poached Farm Eggs with Heirloom Tomatoes, Red Onions, Oregano and Feta

  1. Place 2 slices of tomato on each of 4 plates and top with a poached egg.
  2. Crumble feta on top.
  3. Add onions and a few oregano leaves.
  4. Drizzle with olive oil, and sprinkle with salt and pepper.
