Vegetable and Apple Curry
- 1 large yukon gold potato, cut in cubes
- 1 large onion, cut in wedges
- 2 garlic cloves, minced
- 1 tablespoon chili pepper, seeds removed and minced
- 3 sweet-tart apples, cored and chopped
- 2 tablespoons vegetable oil
- 34 cup golden raisin
- 2 cups frozen peas
- 2 tablespoons curry powder
- salt and pepper
- 1 (14 ounce) can coconut milk
- 2 teaspoons cornstarch (dissolved in 1 tablespoon water) (optional)
- In large saucepan, boil potatoes until just tender, about 20 minutes.
- In frying pan, saute onion, garlic, chile pepper and apples in oil over medium until onion is translucent; stir frequently.
- Drain potatoes and add to frying pan, along with raisins and peas.
- Add curry powder and salt and pepper to taste.
- Mix to combine.
- Stir in coconut milk.
- Cook 15-20 minutes.
- The cornstarch may be added to thicken sauce if desired.
