Turkey with Warm Arugula Salad

  1. Prepare Turkey Cutlets: If turkey cutlets are thick, pound them to 1/4-inch thickness.
  2. Rub cutlets with salt and pepper.
  3. In nonstick 12-inch skillet, heat oil over medium-high heat until hot.
  4. Add cutlets and cook about 4 minutes or until golden, turning once.
  5. Transfer cutlets to platter; cover with foil to keep warm.
  6. Prepare Tomato-Arugula Salad: To same skillet, add tomatoes and cook 1 minute.
  7. Remove skillet from heat; set aside.
  8. In medium bowl, with fork, mix green onion, Parmesan, vinegar, oil, salt, and pepper.
  9. Add arugula and gently toss to mix well.
  10. To serve, top turkey cutlets with arugula mixture; spoon warm tomatoes over greens.
