Low Fat Potato Salad
- 1 12 lbs baby potatoes
- 1 cup Greek yogurt
- 14 cup low-fat mayonnaise
- 2 teaspoons prepared mustard
- 14 cup diced green pepper
- 1 cup chopped celery
- 1 teaspoon salt
- 12 teaspoon pepper
- 2 hard-boiled eggs
- Boil water and add potatoes and eggs while the water is cold.
- Mix yogurt, mayonnaise, mustard, salt and pepper.
- Chop celery and green peppers finely.
- Peel eggs under cold water and mash.
- salt and pepper to taste.
- Blend all the ingredients together and chill.
