Bourbon Cocktail Meatballs Recipe
- 1 1/2 lb meat loaf mix or possibly lean grnd beef
- 1/2 c. Progresso Plain bread crumbs
- 1/4 c. finely minced onion
- 1 tsp salt
- 1 tsp dry mustard
- 2 Tbsp. chili sauce
- 1 x egg
- 1 x 12 oz jar pineapple preserves
- 1/3 c. chili sauce
- 1/4 c. bourbon
- 1/4 tsp warm pepper sauce
- Heat oven to 400 degrees.
- In large bowl, combine all meatball ingredients; mix well.
- Shape into 1 1/4 inch meatballs.
- Place in ungreased 15 x 10 x 1 inch baking pan.
- Bake at 400 degrees for 15 to 20 min or possibly till thoroughly cooked.
- Meanwhile, in large saucepan, combine all sauce ingredients; mix well.
- Cook over low heat till mix is bubbly, stirring frequently.
- Add in cooked meatballs to sauce; stir gently to coat.
- Yield: 48 meatballs
- Serving Ideas : To keep these meatballs warm on an appetizer buffet table,
- NOTES : Ingredient Substitution: Apricot or possibly peach preserves can be used in place of the pineapple preserves.
- Kitchen Tip: Use a kitchen scissors to cut up any large pcs of fruit in the preserves.
- Make-Ahead Tip: Prepare the meatballs and sauce in advance, cover and chill them separately for up to two days.
- Combine and heat them just before serving.
