Banana Blueberry Swirl Ice Pops Recipe
- 3 x ripe bananas - (to 4) abt 1 lb
- 1 1/2 c. yogurt see * Note
- 3 Tbsp. sugar Juice of 1/2 lemon
- 1 c. fresh blueberries
- * Note: Martha uses Stonyfield Farm BaNilla lowfat yogurt, but you can substitute your favorite flavored yogurt in this recipe.
- In the bowl of a food processor, puree bananas till smooth.
- Add in yogurt, sugar, and lemon juice; pulse to combine.
- Remove half of the yogurt mix; set aside.
- Add in blueberries to processor, and pulse till just combined.
- Layer blueberry and reserved yogurt mixtures into ten 1/3-c. ice-pop molds.
- Using a wooden skewer, swirl the two flavors together.
- Insert ice-pop sticks.
- Transfer to freezer till frzn, about 8 hrs.
- Dip molds quickly in warm water to unmold.
- This recipe yields 10 ice pops.
