Madeline's Comfort Corn Bread Recipe
- 2 c. yellow cornmeal
- 2 c. flour
- 2 tbsp. sugar
- 1 teaspoon salt
- 1 teaspoon baking pwdr
- 1 teaspoon soda
- 2 c. buttermilk
- 2 Large eggs
- 1/4 pound butter (or possibly butter)
- Heat butter in 9x12 inch baking pan.
- Set aside.
- In large bowl place cornmeal, flour, salt, baking pwdr and sugar.
- Add in the Large eggs (slightly beaten) to the dry ingredients and use hands to fold in till you get a crumbly texture.
- Add in buttermilk and soda.
- Stir well.
- Add in melted butter.
- Stir till mixed.
- Bake 400 degrees, 20-25 min.
- This is very moist and "custardty".
