Potato Encrusted Salmon Fillets

  2. Preheat oven to 350F.

  4. Check the fillets for pin bones.

  6. Spoon 1 tablespoon of mustard on each fillet and spread to cover the top.

  8. Pack 1/2 of the grated potato in your hands and place on top of each fillet and spread to cover.
  9. season with salt & pepper.
  10. 5.
  11. Heat 2 tablespoons of the oil in a large non-stick pan.
  12. Place each fillet with the potato side down in the now hot oil and brown until golden about 2-3 minutes.
  13. 6.
  14. Now put each fillet with the potato side up in a baking dish or tray.
  15. 7.
  16. Bake in hot oven to finsh about 15-20 minutes.
