Potato Encrusted Salmon Fillets
- 2 (6) salmon fillets
- 2 tbsp. whole grain mustard
- 1 lg. potato, peeled and grated
- Vegetable oil for frying
- Salt and pepper to taste

- Preheat oven to 350F.
- 2.
- Check the fillets for pin bones.
- 3.
- Spoon 1 tablespoon of mustard on each fillet and spread to cover the top.
- 4.
- Pack 1/2 of the grated potato in your hands and place on top of each fillet and spread to cover.
- season with salt & pepper.
- 5.
- Heat 2 tablespoons of the oil in a large non-stick pan.
- Place each fillet with the potato side down in the now hot oil and brown until golden about 2-3 minutes.
- 6.
- Now put each fillet with the potato side up in a baking dish or tray.
- 7.
- Bake in hot oven to finsh about 15-20 minutes.
