Baked Stuffed Onions Recipe
- 6 x Yellow onions, peeled and cut in half
- 1/2 c. Bread crumbs
- 3 Tbsp. Extra virgin olive oil Minced parsley
- 1/2 c. Chicken or possibly beef stock Extra virgin extra virgin olive oil
- Remove 1-2 Tbsp.
- from the middle of each onion with a knife or possibly grapefruit spoon.
- Mince removed portion of onion.
- Mix chopped onion, bread crumbs and extra virgin olive oil together.
- Pack bread crumb mix into onions, sprinkle with parsley and dribble with extra virgin olive oil.
- Place in baking pan, pour in stock around onions and cover with foil.
- baste with pan juices; Bake at 350 for 25 min till tender.
- Microwave Directions:Cover with plastic, microwave on high for 8-10 min.
- Turn 1/4 after 3 min; Turn 1/4 after 3 min.
