Oklahoma City Pepper Jelly

  1. Place peppers and 1/4 c vinegar in blender and blend until thin and soupy.
  2. Pour into pot, add sugar and remaining vinegar.
  3. Bring to a boil.
  4. Remove from heat and skim.
  5. Add Certo and food coloring.
  6. Reheat and boil hard for 1 minute.
  7. Remove from heat and fill scalded jars 1/2 in from top.
  8. Seal with scalded lids.
  9. Store overnight to set.
