Harvest Chutney Recipe

  1. In 5 qt pot, combine sugar, vinegar, salt, grnd ginger, mustard seeds, peppercorns and cayenne.
  2. Bring to boiling.
  3. Mix tomatoes, apples, zucchini and onions.
  4. Boil gently, uncovered, stirring till almost thickened, about 1 hour.
  5. Add in raisins, candied ginger, boil gently, stirring till thickened - 10 to 15 min.
  6. Fill warm canning jars to 1/4 inch of top.
  7. Run spatula down between chutney and jars to release air bubbles.
  8. Place on rack in canning kettle half of full of warm water to cover jars by 1 inch.
  9. Boil 5 min.
  10. Remove from water and cold thoroughly.
