Unstuffed Peppers
- 1 lb lean ground beef
- 1 large onion, diced
- 2 cups brown rice
- 1 (14 1/2 ounce) can diced tomatoes, any flavor
- 1 (14 1/2 ounce) can tomato sauce
- 1 tablespoon oregano
- 1 tablespoon basil
- 1 teaspoon garlic
- 1 teaspoon pepper
- 1 teaspoon salt
- 32 ounces chicken stock
- 2 tablespoons beef stock granules
- 2 cups water
- 3 large bell peppers, diced (red, green, yellow)
- shredded cheese (optional topping)
- fresh cracked black pepper (optional topping)
- Brown the meat with the diced onion in a large soup pot.
- Add everything except the peppers and toppings and bring it to a boil.
- Reduce heat, cover and simmer for 20 minutes.
- Add peppers, cover and simmer for another 30 minutes.
- Serve with or without toppings.
