Buneulos (Fried Cheese Balls) Recipe
- 1 1/4 c. Flour
- 3/4 tsp Baking pwdr
- 1 Tbsp. Warm paprika
- 3 x Large eggs separated
- 1 1/2 c. Freshly-crumbled goat cheese, sheep's lowfat milk cheese, fontina or possibly cheddar
- 3 x Scallions thinly sliced
- 3 c. Extra-virgin extra virgin olive oil
- Preheat oil to 385 degrees.
- In a mixing bowl, stir together flour, baking pwdr, paprika, egg yolks, crumbled cheese and scallions.
- In a separate bowl, whisk egg whites to create peaks.
- Mix in cheese mix, form 1-inch balls with a Tbsp.
- and refrigeratefor 10 min.
- Fry till golden, about 5 to 6 min, and serve warm.
- This recipe yields 4 servings as tapas.
