Grilled Plums with Yogurt and Pistachios

  1. Prepare outdoor grill for direct grilling on medium.
  2. In 4-quart saucepan, stir together vinegar, sugar, 1/4 teaspoon salt, and 1/2 teaspoon freshly ground black pepper.
  3. Heat to boiling on medium-high; reduce heat to medium and simmer 5 minutes or until reduced by half.
  4. Remove from heat and add plums, stirring to coat.
  5. Place plums on hot grill, cut sides down, reserving vinegar mixture.
  6. Grill 5 to 6 minutes or until plums are lightly charred, brushing vinegar mixture onto plums halfway through.
  7. Divide plums among 4 shallow bowls and top with yogurt.
  8. Sprinkle with pistachios and drizzle with honey.
  9. Garnish with mint.
