Sopa Ranchera Ranch-Style Soup
- 14 cup chopped onion
- 1 tablespoon cooking oil
- 4 cups chicken broth
- 14 cup long grain rice
- 14 cup tomato puree
- 14 teaspoon salt
- 1 dash pepper
- 1 cup frozen peas
- In saucepan cook onion in hot oil tender but not brown.
- Stir in chicken broth, rice, tomato puree, salt and pepper.
- Bring to boiling.
- Reduce heat; cover and simmer for 25 minutes.
- Stir in frozen peas, covered, 5 minutes longer.
- Makes 4 servings.
