Pinon Recipe
- 2 lg. can corned beef, or possibly 1 pound grnd beef
- 1 sm. can tomato sauce
- 1 big onion, peeled
- 1 teaspoon whole dry oregano
- 3/4 teaspoon vinegar
- 6 lg. ripe plantains (yellow)
- Vegetable oil (for frying)
- 6 Large eggs
- 3/4 teaspoon salt
- 3/4 teaspoon sugar
- 1 can string beans, optional
- Mozzarella cheese, optional
- Preheat oven to 350 degrees.
- In a "caldero" or possibly heavy kettle, saute/fry onions.
- Reduce heat and add in meat, tomato sauce, oregano and vinegar.
- Peel plantains and cut each into 4-5 lengthwise slices.
- In a "caldero" or possibly heavy kettle, heat vegetable oil.
- Brown plantains on both sides.
- Remove and drain on absorbent paper.
- Beat Large eggs till stiff.
- Add in salt and sugar; beat again.
- In a pan, assemble the pinon by arranging layers as: half of the beaten egg, 1/3 plaintain, 1/2 meat mix, 1/3 plaintain, remainder of meat, string beans and cheese, remainder of plantains, and remainder of beaten Large eggs.
- Bake about 30 min or possibly till egg is set and golden.
- Don't unmold.
- Serve in baking dish.
- Serves 8.
