Frosty Cucumber Mold
- 2 cups water
- 1-1/2 cups BREAKSTONE'S or KNUDSEN Sour Cream
- 2 tsp. lemon juice
- 2 cups cucumber
- 1/4 cup scallions
- 1 tsp. dill pickle
- lemon zest
- Dissolve gelatin in boiling water.
- Stir in sour cream and lemon juice with wire wisk until smooth; refrigerate until mixture mounds.
- Stir in cucumbers, green onions and dill; spoon into 6-cup mold.
- Refrigerate until firm, about 4 hours.
- Unmold onto serving plate; garnish with lemon twist, dill and cucumbers.
