Banana Nut And Ginger Bread Recipe
- 2 c. packed brown sugar
- 1 c. mashed bananas
- 2 x Large eggs
- 1 tsp vanilla extract
- 2 Tbsp. vegetable oil (optional)
- 3 c. all-purpose flour
- 2 tsp baking soda
- 1 tsp salt
- 1 1/2 tsp grnd cinnamon
- 1/2 tsp grnd allspice
- 1 Tbsp. grnd cardamom
- 1/2 tsp grnd cloves
- 2 c. dark beer
- 1 1/2 c. minced walnuts
- 2 Tbsp. all-purpose flour
- 2 c. dates, pitted and minced
- 2 Tbsp. chopped fresh ginger root
- 1 Preheat oven to 350 degrees F (175 degrees C).
- Lightly grease two 9 x 5 inch loaf pans.
- 2 In a large bowl cream the brown sugar, banana, Large eggs, and vanilla.
- For moister bread, add in oil, if you like.
- 3 In a separate bowl, sift together 3 c. flour, baking soda, salt, cinnamon, all spice, cardamom, and cloves.
- Alternately blend the flour mix and beer into the creamed mix.
- 4 Toss the walnuts with the remaining flour.
- Stir in the dates and ginger to the mix and blend well.
- Pour into two greased 9 x 5 loaf pans.
- 5 Bake in a 350 degree F (175 degrees C) oven for 1 hour, or possibly till inserted toothpick emerges dry and clean.
